“봐라. 우족과 머릿고기가 차져야 떠먹으면 피가 되고 살이 된다. 국물이 식으면 묵이 될 정도로 푸욱 고아야 손님에게 한 그릇 대접한다는 기분이 난다. 가루를 풀어 뽀얗게 만든 우족탕은 그냥 국일 뿐이지. 그러니 전주우족탕은 그냥 탕이 아니야. 밥심을 만드는 작품인 게지”

전주 금암동 김판쇠전주우족탕에는 백년노포처럼 책임감 막중한 아버지셨던 창업주, 올해 작고한 김판쇠 옹이 부엌 일꾼들에게 강조하던 목소리가 펄펄 끓는 전주우족탕처럼 생생하고 건재하다. 초장에 찍어먹는 수육, 뭉근하니 뜨뜻한 국물로 속풀이 해장을 하려는 손님들을 맞이하며, 아들 김동우 씨는 오늘도 아버지를 떠올린다. 팔 남매 중 셋째로 태어난 전주 토박이 아버지는 조실부모로 배고픔을 견디다 열여섯 나이에 전주 설렁탕집 부엌데기로 들어가 육수와 탕으로는 도가 트신 분이었다. 한때는 서울에서도 부른 일등 일꾼이었다고도 했다.

Born as the third of eight siblings, a native Jeonju, father endured hunger as he lost his parents early in life and entered Jeonju Seolleongtang restaurant at the age of 16 and became a master with broth and soup. He once said he was the number one worker who was even called to Seoul.

60년 부엌인생의 아버지는 손이 크고 후한 분이셨다. “나이 마흔에 처자식이 부엌데기 대신 우족탕집 사장네 마누라와 자식이라 불리니 참 좋았어. 더 바랄게 없었지. 그러고 나니 자리 잡도록 챙겨준 동네 인심이 보이더라고” 아버지는 종종 그렇게 말씀하셨다. 내 간판을 단 불혹에는 사장님 소리에 만족하실 만도 했건만, 아버지는 “동네 어린이 손님도 우리 가게의 주인이다”라며 깍듯이 인사하고 존댓말로 배웅하시던 분이었다. 그런 아버지 탕 솜씨가 유독 좋다고 동네에 이름난 것은, 그 고운 인사성과 달리 식당 일이 궂고 맵고 거칠었기 때문이다.

The reason why he was famous in the neighborhood for his father's good soup skills was that, unlike his fine greeting, the restaurant work was bad, harsh, and rough.

한 그릇 전주우족탕을 만든다는 것은 그저 노고와 정성이다. 손과 허리가 성할 날이 없으니 혼자서는 힘든 일이다. 하지만 “자고로 새벽부터 불 피우고 맛을 내는 손은 처자식을 굶길 일도 없다더라”며, 기꺼이 아버지의 손을 잡으신 어머니가 있었다. 한식요리의 소박한 지혜를 자식에게도 전해 주신 어머니 김효순 여사는, 누리고 비린 맛을 줄이고 소의 영양을 푹 고을 줄 아는 아버지와 하늘이 내린 궁합이었다.

Mrs. Kim Hyo-soon, a mother who delivered the simple wisdom of Korean cuisine to her child, became a perfect partner with my father like a match made from heaven. She could reduce the smell of fat and fishy taste, and knew how to minimize the destruction of nutrients of beef. 

어디 손맛만 궁합이던가. 밥심은 나눠야 한다는 마음도 하나였다. 주변에 양로원과 장애인, 굶는 아이들이 있으면, 아버지는 언제나 좋은 수육을 남겨 두었고 어머니는 온기로 차진 국물 한 그릇 베풀기를 즐겨했다. “돈 없어서 굶는 사람은 내가 그냥 못 둔다. 노는 술꾼 만들 일은 없으니 술은 못 꺼내주겠지만. 언젠가 내가 없을 날에도 굶는 사람한테 밥에 국물은 든든히 먹여 보내거라” 소천하시기 전에도 어머니는 배고픈 이를 마냥 버려두는 건, 사람 도리가 아니라 하셨다.

If there were nursing homes, disabled people, and starving children around, my father always left good boiled pork, and my mother enjoyed giving them a bowl of warm soup. "I can't just leave people who starve because they don't have money. I won't make them drinkers, so I can't give them alcohol. But even when I'm not there someday, feed the starving people fully with rice and soup," even before she passed away, she said that it is not a human duty to just leave the poor aside.

그렇게 1984년 1월 금암동에 자리 잡은 김판쇠전주우족탕은 장작가마솥이 가스가마솥으로 바뀌는 세월을 함께했다. 아침에는 해장, 점심과 저녁은 반주가 제격이라던 동네 손님들은 해를 거듭할 수록 이 집안의 아버지와 아들, 손자가 차례로 드나드는 것을 모두 보아 왔던 것이다. 그러니 언제부터인가 아버지의 말씀대로 김동우 씨는 음식이 예술이고 작품이며, 손님들은 이를 알아주는 고마운 존재로 보이게 되었다고 한다. 김동우 씨가 한때 넓은 세상을 경험하고 아버지의 부엌으로 돌아와, 열심히 노력해 입에 착착 붙는 진하고 담백한 국물 맛을 내고서부터 제일 먼저 하기 시작한 것은 아버지의 베푸는 손을 따르는 것이었다. 어렸던 아버지처럼 고된 나날을 보낼 지역의 소년소녀 가장에게도, 홀로 지내시는 동네 어르신들에게도.

그렇게 베풀다 보니 김동우 씨에게 돌아오는 것도 있었다. “음식에 재주를 부리던 우리 아들이 지역에서 큰상을 타 왔을 때 신명이 났지요. 자기도 할아버지와 아버지처럼 음식을 하고 싶다니” 아마도 IMF로 힘들 때도, 소 값이 들썩일 때도 직원들의 손을 잡고 끝까지 함께 하겠다고 의리로 서로를 격려했던 모습이 아들의 눈에도 흐뭇한 장면으로 보였으리라.

코로나 시국을 2년 째 맞는 아직은 모두가 힘든 시기다. 김동우 씨는 “그래도 아버지 때와 맛이 똑같다”는 손님들의 평가에 마음이 놓인다. 자극적이고 강렬한 맛이 유행할 때도 그런 말은 그를 늘 안심시킨다. 그래서 새로운 시도보다는 늘 뜨거운 한 그릇 가득 전주우족탕을 담아낼 생각이다. 3대가 운영하는 가게로 입소문을 내 주시는 분들이 고마웠던 그는, 몇 년 전부터 전주 음식홍보 사회활동도 시작했다. 시간이 날 때마다 지역 봉사에 나서면서, 그는 맛으로 이름난 전주에서 ‘노포’라는 이름으로 불리는 책임감이 참으로 막중하다고 한다.

He was grateful to those who spread the word of mouth as a store run by three generations and started promoting Jeonju food a few years ago. While volunteering in the community whenever he has time, he is said to have a great sense of responsibility called "Old restaurant" in Jeonju, which is famous for its tasty dishes.

“매장을 매일같이 열다 보면 한 순간에 무너질 것처럼 아픈 순간도 있었어요. 세상의 변화에 우리만 이대로 머물러도 될 지 걱정을 한 적도 있었지요. 하지만 역시 전주우족탕의 정신은 장작이 사그라질 때까지 아궁이에 불을 지피던 옛 맛에서 나온다는 것을 믿습니다” 
"When I opened the store every day, there were moments when it hurt as if I would collapse in a moment. There was a time when I was worried about whether I could stay as it is because of the changes in the world. But I also believe that the spirit of Jeonju Ujoktang comes from the old taste of setting fire to the furnace until the firewood disappeared."

그래서일까. 세련된 전신소독 방역기를 들이고 주방은 서구식으로 바뀌었지만, 소박한 간판에서 가마솥 뚜껑이 열리는 붉은 로고를 단 멋진 간판으로 바뀐 지도 오래지만, 그리고 오랜 투병을 하셨던 부모님의 빈자리를 아내 박경축 씨와 함께 채운 지도 수년이 지났지만. 김동우 씨는 행여 아버지가 남겨 주신 이야기들을 한 구절이라도 잊을까 기억나는 대로 되뇌곤 한다. “소머리와 우각새, 우족에서 나온 국물은 진국이라 순박하고 우직한 맛이다. 우리도 평생 그렇게 살자” 그가 바라는 삶도, 잘 다듬어 고아 낸 탕 한 그릇처럼 푸짐하고 따뜻한 삶이리라.
